I also never know how much of each thing goes in a recipe. Generally, I walk into my apartment with my stomach growling--it doesn't really matter what time it is, I'm always growling--anywhoo, I walk into my apartment and start scavenging. Now, you wouldn't think you'd have to scavenge when you're the only one purchasing groceries, but I do.
So, I scour the cupboards and decide between Mexican-ish or Italian-ish food.
These are the ingredients I always have on hand.
Recently I went with Mexican-breakfast-ish food.
That's very specific, isn't it?
I always try to have a bag of these frozen peppers and onions in my freezer. I purchase it when it's on sale for $1.00 and use it as I need it. I'm only one person! I can't use an entire bag of most things in one meal...so I fold the top and clip with the bird clips.
This recipe started with those peppers and onions, a bit of garlic and some "Slap Ya Mama" seasoning sauteed in a pan with some olive oil.
"Slap Ya Mama" is no joke, your nose may run and that's the way I like it.
Next gather all your other ingredients:
I added a splash of milk a sprinkle of cumin, salt, onion powder and cayenne pepper to my eggs. Do you like those things? You can add them too. You don't like them? Just go with milk and salt. This is customizable cooking, here. (-:
I used my springform pan because I wanted to get my Mexi-Layers out easily. Start the assembly process:
Tortilla, black beans, cheese and about 1/3 of the eggs.
Tortilla, sauteed peppers and onions, salsa and cottage cheese.
Tortilla, cheese and the rest of the eggs.
Then I stabbed it. I didn't want my layers slipping and sliding all over the place so a few pokes with the ol' fork took care of that.
Bake that baby, take it out, let it cool.
I'd say you can eat it now--BUT, I have better ideas....of course I do.
Just cut it into quarters, wrap each section in foil and pop in your freezer. If you're paranoid about freezer burn [Who has quirky freezer burn fear? This girl.], just put the wrapped sections in a ziplock bag.
On a morning when you want a hot breakfast...just stick one foil-wrapped quarter of this in the oven at 350 when you get in the shower and by the time you're ready to head out the door it will be perfectly cooked. That is if it takes you about 30 minutes to get ready in the morning.
If it takes you an hour to get ready in the morning, you will have a briquette on your hands. If it takes you 15 minutes you need to brush your teeth longer...or I'm just jealous.
Breakfast Mexi-Layer
- 1 cup frozen peppers and onions
- 1 Tbsp or 1-2 cloves, diced garlic
- 1-2 tsp Slap Ya Mama or seasoned salt
- 3 tortillas
- 5 eggs
- cumin, onion powder, cayenne pepper, and salt to taste
- 1/2 can black beans
- 1 cup shredded cheese
- 3/4 cup cottage cheese
- 1/2 salsa
Assemble in layers and bake at 350 for 45-60 minutes or until eggs are cooked through.
